We will be at WDW the last of Jan and 1st week of Feb. Are dining reservations needed during this non-peak time? If so, is it likely that we could make those res. the same day in the a.m.? we already have reserv. for character dining.

I would never recommend that a guest completely forgo dining reservations, Kerry, no matter what time of year they were visiting.  I understand that you have your character meals all booked, and that is a great start.  I would suggest, though, scheduling at least one sit-down meal for each of  the other days of your trip.  Now, if you're the type of family that doesn't have a real preference for where you enjoy dinner, then you might be okay without reservations, assuming that if worse comes to worse you are open to eating counter service meals.  If, however, you have your heart set on any of the more popular restaurants (including 'Ohana, Le Cellier, Whispering Canyon Cafe, etc) then you should absolutely make reservations.  On the other hand, chances of scoring a walk-up table (or same day reservation) at one of the more obscure restaurants is a probability, especially during slower times of the year.  I suppose it's personal preference, but if you do decide to go without reservations, do be prepared to be flexible with your dining times and locations.  I hope that helps!
