I visited WDW for the first time last year and can't wait to return. I'm on the fantastic free dining option but wanted to know if it's possible to upgrade some meals from quick service either by using more than one credit or by paying extra?

Hello Andy and welcome to the Disney Parks Moms Panel where it's always super fun for me to assist a fellow Guest from the United Kingdom with their jolly holiday plans to visit the magic of Walt Disney World Resort.
There are some terrific Walt Disney World Deals at present and I'm delighted to hEar you're so looking forward to making a return visit to Walt Disney World Resort and have been able to take advantage of a free Disney Dining Plan offer for your stay!
With the 2018 Quick-Service Dining Plan Guests receive per night of stay 2 x Counter or Self Service meals, 1 non-alcoholic or alcoholic drink (for over Guests over 21 years old) 2 x select snacks and a Resort Refillable Mug. Currently it's not possible to utilise Quick-Service dining plan entitlements to upgrade to a Table Service meal, however you can pay out of pocket for a Table Service meal, Character dining or Dinner Show.
Plus I'm also happy to share that in my own experience it's certainly possible to pay the extra to upgrade a free Quick-Service Dining Plan to another Dining Plan which does include Table Service meals which can be used for Character dining or Dinner Shows.  In the past I've easily arranged this upgrade by speaking on the phone with a helpful Cast Member by dialling the freephone number contained within this Walt Disney World Resort Phone Directory
    Have a great Disney day.
