    Tanya, I need your help FAST! Arrive June 7th. Son is gluten/casein free. Have left messages at 407-824-5967 to discuss dietary issues, buy no one is calling back. The message says 2 business days and it has been more. What should I do? Thanks so much.

    Hi there Jaynee,

    Don't stress!  Many guests at Disney have special dietary requirements, including lots of kids on the Autistic Spectrum with gluten and casein free diets.  In my experience, the best way to work with Disney Dining to ensure that your son's special dietary concerns are met is to call ahead to the Disney Dining Line before your table service reservations (407-939-3463).   Once you alert Disney that your son requires a gluten and casein-diet, that information will be forwarded to the chefs in the restaurants where you have advanced dining reservations, allowing them to prepare in advance to accommodate your needs. When you arrive at a restaurant, inform the Cast Member who seats you that your son has special dietary needs, and they will reference your file and a chef (or his/her designee) will come out to speak with you about your son's options for his meal.  They'll even help you figure out an appropriate dessert!

    To help allay your concerns, I suggest you visit the independent website, allears.net, where there is a wonderful section under "Dining" and then "Special Dietary Needs," where guests share their wonderful experiences with special dining requests.  There is even a photo of gluten-free pancakes at Chef Mickeys.
