We are staying at the WL and ordered a cake for the children's birthday. I was hoping to get something really cook but was told via the cake line all they could do is a filled cake with mickey confetti and streamers with their name on it. ANy ideas?

You might have one option to do something a little different for a cake but it isn't always possible.  When I have spoken to a cast member from private dining at a different location he said that each chef had the ability to do a custom cake for a guest but they had to have at least a 72 hour window and if they were busy with other activities (conventions etc) that it might not be possible.

I suggest you call the Wilderness Lodge private dining and ask about this possibility to send  a personal request to the chef.  Have a general theme idea in mind and its best not to be real specific beyond that so the chef can have the freedom to come up with a creative idea. Not sure if the request will be granted but certainly worth a try!
