Mom and daughter on Expedition Everest

This might sound strange, but I'm wondering if there are any rides/shows at Epcot where I might be able to take my granddaughter when it's time for her nap. I know the stroller is always an option, but what about someplace cool and relaxing?

Not strange at all; kiddos can only take so much park touring before they tire out!  Luckily for you, Epcot offers some great options for parents (and grandparents!) wishing to grant weary little ones a bit of down time.  My first choice would be Ellen's Energy Adventure.  Not only does it provide a cool and dark place to rest, but also it lasts about forty-five minutes.  Your granddaughter ought to be able to squeeze a nice little nap in.  My second choice would be Spaceship Earth.  It, too, is cool and dark and the relatively slow moving cars serve to lull little ones to sleep.  It's not nearly as long as Ellen's Energy Adventure, but still a good option to catch a quick respite.  I hope that helps!
