    I read that it takes a good 2 days to visit MK, however-I am traveling with 2 boys who have no interest in "girl/princess" activities. Will we be able to fit everything in 1 day w/o getting too stressed out?

    There is actually very little at the Magic Kingdom that is "girl/princess" specific. The very small list of attractions that you could skip with boys are the character greeting at Ariel's Grotto and possibly Cinderella's Carousel, Snow White's Scary Adventures, and It's A Small World (though many boys enjoy these). Other than that, everything else is either gender neutral or boy-centric. 

    You hear a lot about the character meals at Cinderella's Royal Table and the Bibbidi Bobbidi Boutique salon because these activities take a fair amount of planning and expense, but really only a very small percentage of the guests at the Magic Kingdom take part in them. They are extra and not included in the regular admission fee.

    Your boys will love Pirates of the Caribbean, the Haunted Mansion, the Jungle Cruise, Space Mountain, Buzz Lightyear's Space Ranger Spin, and many, many other attractions.  I would say that to experience everything they would be interested in and not go crazy, you would really need two days.
