We're only planning on eating sit-down meals for dinners. I'm a little concerned - are there any healthy options for lunches in the parks?

Disney has made great strides in the last few years in regard to nutrition. You should be able find some healthier options at most of the counter service restaurants in the parks. For example, on my most recent trip to WDW, we ate at the Columbia Harbor House in Liberty Square at the Magic Kingdom. I had a yummy hummus and fresh vegetable sandwich with a side order of red grapes. At the Sunshine Food Fair at Epcot we had salads and sushi. Fresh fruit is available almost everywhere in the parks now for snacking.

I feel confident that you'll be able to find healthy and satisfying meals during your visit.
