Which park is worth seeing a second day due to time restraints in seeing and doing "everything" in only one day?

The Magic Kingdom is definitely a 2 day park if you want to take advantage of most of the attractions, shows, parades and stay for the fireworks.

When you factor in taking time to slow down and enjoy the details that WDW has to offer, Magic Kingdom really requires more than one day.

The size of Epcot would require more time as well but if I had to pick just one park, I would tour Magic Kingdom on (at least) two separate days.
