Hi, Kelly - Is that ALL you plan to do?!   Just kidding, this is quite an ambitious list!   But here it goes!  Here is an idea of what you can do to squeeze it all in!  Switch days around as needed for hours/fireworks dining availability:

26th:  Dinner at Boma, then head to Polynesian to watch fireworks from the beach
27th:  Donald's Safari Breakfast and Animal Kingdom
28th:  Typhoon Lagoon in the morning, Epcot late afternoon with dinner at LeCellier
29th:  Magic Kingdom with dinner at Whispering Canyon
30th:  Hollywood Studios with either lunch or dinner at 50's Prime Time Cafe
1st:    Blizzard Beach in the morning, Disney Quest in the afternoon (or Magic Kingdom)
2nd:  Epcot with lunch at Teppan Edo.  Spend the second half of your day in Epcot or hop to whatever
park you want to see more of
3rd:  Breakfast at 'Ohana, then head to Disney Quest if you chose to do Magic Kingdom on the 1st.

WOW!  You will have quite the busy week, but it can be done!   Just remember to keep pace with your 5 year old and take breaks when he needs it!   I know they are tough little pirates, but afternoon breaks are really important and an hour at the resort pool can be a lot of fun!   I will be in WDW the weekend of the 26th with the many of the moms from the panel - here's hoping for nice weather and manageable crowds!
