We are looking for something to do on the day of our arrival, what would you suggest that doesn't involve visiting one of the theme parks?

There are lots of ways to have fun on your arrival day without ever stepping foot into one of the theme parks, Karen.  Years ago--during my family's very first visit--we boarded the Epcot monorail on our first day.  Did you know that it will take you inside the park so that you can get a glimpse of the fun without actually using a day off your park tickets?  Of course, you don't actually get to stay in the park, but having the chance to see the hustle and bustle will surely build anticipation.  You could also schedule a character meal at one of the resort hotels.  Chef Mickey's at the Contemporary is a popular choice.  Another option would be to relax poolside.  You might also consider visiting Downtown Disney for some shopping, and maybe an indulgent ice cream sundae from Ghirardelli (always a family favorite for us).  Lastly, perhaps a dinner show, or a special viewing of the fireworks (via the Pirates and Pals fireworks voyage) would be just the way to jump-start your magical vacation.  Enjoy!
