How do you know which restaurants you need ADR for and which ones you don't?

Basically, if there is ANY table service restaurant that you feel strongly that you would like to dine at, then you should make a reservation. There are some restaurants in particular that often fill up their reservations within the first week of availability. These include Cinderella's Royal Table, Victoria & Alberts, Chef Mickey's, California Grill, and Le Cellier. But really, if you feel strongly about dining at ANY character meal or signature dining experience, you should make reservations as soon as possible. Also, if you have a larger traveling party (more than 6 people) or must eat during typical American meal hours (for example, dinner between 5:30 and 6:30 p.m.) then you need to make reservations. To make your reservations, call Disney Dining at 407-WDW-DINE.
