I'm trying to get all of our meals lined up and had a question regarding restaurants in the parks. If we wanted to eat at a restaurant in MK and did not get a park hopper pass, would we need to use our pass for that day also?

A big "HELLO" from one fellow Texan to another!  Welcome to the Moms Panel!

If you set a dining reservation inside the Magic Kingdom, you will want to utilize your day ticket for the Magic Kingdom.  This is the same for all dining restaurants located inside any one of our Disney Theme Parks.  I recommend setting which park you will be visiting on a given day and finding a restaurant inside that park.  Without the Park Hopper Option, you are only able to visit one park for each day of your visit.

Thank you so much for visiting the Moms Panel.  Please join us again real soon should any new questions or concerns pop-up.  We are always ready to help our guests plan the vacation of a lifetime.  May your Walt Disney World vacation be filled with many new and MAGICAL memories!
