First of all, let me say that I am so sorry that your family is going through this difficult time, but I think a prescription for some Disney magic might be just what the doctor ordered!
Because
character meals are about not only the meal itself but also about the experience and interactions, each person who attends the meal must pay for their meal, whether they eat or not. If she does feel like eating but just can't find something that really appeals to her, you should feel free to speak with a server or other Cast Member and tell them her specific needs. They may be able to assist you to find something that does appeal to her a bit.
Also, you should be aware of the
services that Walt Disney World Resort offers to guests with disabilities. Your mother might be more comfortable if she doesn't have to wait in long lines in the heat, and there are additional services that might work for her as well.
