My husband will be visiting WDW next week. I have been many times since childhood. Do you have any ideas for 2 adults to shake things up a bit and do something different on top of just touring the theme parks? We are celebrating our anniv at this time also

There are lots of things for two fun-loving adults to do outside of the theme parks at Walt Disney World.  Downtown Disney has a multitude of options for shopping and dining.  At Disney's BoardWalk, you can people watch, enjoy free shows in the way of sidewalk entertainers, or grab an ice cream cone.  Also located there is Jellyrolls, a dueling piano bar that is a favorite of mine.  Walt Disney World also features two miniature golf courses that might be what you're looking for.  Fort Wilderness offers recreational opportunities galore.  If you want to explore the waterways, consider renting a boat from one of Disney's marinas.  Or for a unique view, try parasailing with the Sammy Duvall watersports center. Hopefully one of those activities will be just the thing you're looking for!
