What are the height requirements for the rides?

    Allison,

    That is a great question!

Kari answered this very question a while ago, and I agree with her strategy. Going to each ride and checking might take some time. Instead, go to the attractions listing (linked here for you) and in the "height" filter select the height of the guest in question (options are typically listed as "XY in or taller"). You will be able to see what rides they can go on. If you lose the link I placed here, just go to any park page, click on the "Attractions" link, and you will be at that listing for that park.

In the link that I sent to you, I had all four theme parks selected already in the filter. But you could add water parks, if they apply, or remove parks if you want to just look one park at a time. The drop down menu to make those kinds of filter changes is the first one to the left.

On a personal note, when my youngest was just a hair too short to ride Star Tours – The Adventures Continue, the cast member working the line gave her a card that designated her a ship captain who would get front of the line treatment on her next trip. It was not some legally binding uber FastPass+, but just a card that took some of the sting away from not being quite tall enough to ride. At a time where she might have felt sorry for herself, she instead felt special. She held on to that card for a full year, and proudly showed it to the cast member on her return. Another example of Disney turning something that could have been bad into a memory that will last a lifetime! Don't expect this at every ride, but also do not shy away from asking cast members if the child in question is tall enough to ride.
