Hello Robin!  Welcome to the Disney Parks Mom´s Panel.

Congratulations on your first Walt Disney World family vacation.

With a 10 am breakfast reservation, you should go with your kids to Toy Story Mania! attraction, while your husband gets in line for Jedi Training Academy sing-up at ABC Sound Studio.
Toy Story Mania! is one of the busiest attractions at Walt Disney World.  Therefore, I recommend to ride this attraction as soon as the park opens and to get a Fast Pass for a later ride with dad.

Then you will need to join your husband at ABC Sound Studio for the Jedi Training Academy sing-up.
Disney Cast Members will require that your kids be present at sign-up.

This way, your family can make the most of morning hours during a crowded day at Hollywood Studios.
My family always makes the most of early morning hours and my kids enjoy riding Toy Story Mania! and love learning the way of the Jedi.

Later in the day your family will be able to enjoy other attractions as Star Tours and The Twilight Zone Tower of Terror - my six year old daughter favorite ride at Hollywood Studio!
I can also recommend Rock & Roller Coaster, Muppet Vision 3D and Fantasmic! night show.

Happy to help you plan a magical Disney vacation.
