Hi Kathy! You have a great start with your advanced dining reservations and have snagged a couple of hard to get ones with Chef Mickey and Akershus Princess dinner. I will give you some ideas to build your vacation on and include visits to all four parks as there are many things all ages can enjoy in each.

5/3:I always suggest you use your first day to get acquainted with your resort and have a nice relaxing dinner. Traveling is tiring and an early bedtime is best.
5/4: Be at the Magic Kingdom when it opens at 9am and spend day. Either take time for nap at resort in afternoon or head via monorail to Epcot for dinner at Akershus.
5/5: Breakfast at Contemporary, take time to explore this resort.  You can bus from there right to Hollywood Studios where you will be for dinner.
5/6: Swim and relax in morning or head to Downtown Disney for some shopping. Lunch at after too. If time head to Disney Quest for more interactive fun in Downtown Disney or see what movies are playing at the theater. Magic Kingdom will have Extra Magic Hours tonight until 1am if you want to go to this park for some night time fun for parades and Wishes.
5/7: Suggest Epcot starting at opening of 9am to experience attractions. Rest time in afternoon then back to Hollywood Studios for Extra Magic Hours if you have the energy. This park is open until midnight today.
5/7: Up early and head to Animal Kingdom Park and be there by 8am for the Extra Magic Hours. Then rest and head to Studios
5/8: Departure day but not sure what time so if late in day then you can do Animal Kingdom on this day before heading out. It usually takes our family about 1/2 to 3/4 of a day for a complete visit.

This all depends on how active you wish to be or if you want to build rest time into your days.  Park hopping is great but sometimes families feel they have to be hopping all day long.  In any event you will have a great vacation!
