My family will be in WDW next week. We would like to plan one "Adult" night for me and my hubby. Any suggestions?

Date night is one my favorite parts of our annual family trip!  I think I can offer you some tips in this department.
My husband and I like to start with an early dinner in one of Disney's signature restaurants.  We have found that eating early is optimal because we not only miss the prime mealtime crowds, but we also have plenty of options when it comes to after dinner entertainment.  We've done dinners as early as 5:30 but ideally, we like to dine around 6:00.  During our most recent date night we were treated to a fabulous meal at Jiko at the Animal Kingdom Lodge.  It's our new favorite spot for a delicious meal without the kids.  I can also recommend Artist Point at the Wilderness Lodge as a very good choice.
After lingering over a glass of wine and a yummy dessert, perhaps you'll want to take in a show.  La Nouba at Downtown Disney is a very popular destination for some romantic mom and dad time.  If you're looking for something a bit more active, consider making your way around the World Showcase at Epcot before grabbing a spot to enjoy Illuminations.  My husband and I spent our very first WDW date night touring the World Showcase.  We stopped in each country to check out the unique shopping opportunities.  Admittedly we even let our silly sides take over and snapped funny photos from around the world.  We wore sombreros in Mexico, kissed trolls in Norway, and donned a Fez in Morocco.  It was a lot of fun!
The Boardwalk Resort area offers some grown-up entertainment as well.  Jellyrolls, the dueling piano bar there, has provided us with some good times.  Even a simple stroll around the path from the Boardwalk to the Beach Club can be very romantic.
If none of the above strikes your fancy, consider these other options:
    a horse-drawn carriage ride
watching fireworks from the Polynesian beach
stopping for a cocktail in each of the monorail resort lounges
