Welcome to the Disney Parks Moms Panel! I am so excited that you plan to visit Disney's Hollywood Studios and Animal Kingdom theme parks. These two parks have attractions that my family just adores.
While you can certainly plan your Fast Pass+ selections for the afternoon, I generally avoid doing this because, when we do, we cannot make additional Fast Pass+ selections until we have used the third one or the last time window has expired. On our last visit, we had a Fast Pass+ rescheduled because the attraction was down and, on another afternoon, we had a several hour delay using our Splash Mountain Fast Pass+ because it was also down for a while. So I prefer to use those initial three Fast Pass+ selections in the morning then we can book additional Fast Pass+ one at a time in the afternoon.
Also, remember that Pandora - The World of Avatar has opened and Avatar Flight of Passage is a popular ride. I would prioritize it in my Fast Pass+ selections. Nothing quite compares to flying over Pandora on the back of an ikran. You can check the length for shows on the Walt Disney World website.
Star Wars: A Galactic Spectacular, for example, is about 14 minutes. You will see the length of the show listed under "Duration." What is more important to us, however, is the average wait time for a ride in the stand-by queue. I would suggest you look at those to determine which rides you need to use with your Fast Pass+ selections.

My Disney Experience Mobile App. On the app, you can see current wait times for rides. Just remember, you must do your initial three Fast Pass+ selections at the same park!
