Hi, Tammy!  Thanks so much for your questions!

After two days at the Magic Kingdom, and assuming you want to do all four theme parks, I'd probably do Animal Kingdom on the 18th, which is an Extra Magic Hour morning, followed by EPCOT, and finally ending with Disney's Hollywood Studios.  Then, if there's an extra day at the end of your trip, hit the Magic Kingdom again.  I'm not sure if you plan on spacing your days out with the water parks or having a day or two where you just relax at your resort, so that might impact whether or not you have time at the end of your trip to do an extra Magic Kingdom day.

I like to do the theme parks with extra magic hours in the morning.  I like getting the early start, and I find I can get ahead of the game by hitting some of our favorite attractions early, then Fast Passing some of the others during the day.  I find the parks with evening extra magic hours tend to get busier as the day wears on, and with younger children, it's not always an option to stay late into the evening anyway.

There are websites like TouringPlans.com that will give you a calendar of what they project to be the least crowded days, based on historical data.  You might want to check it out and see if it helps you plan your days at all!

If I can help with any other vacation planning questions, just give me a holler!
