During our stay at the Fort Wilderness cabins a couple of years ago, Nicole, we put four kids in one room without any trouble.  The room is actually set up to accommodate four so you should be fine with three in there.  But if you find that your littlest one is not quite ready to sleep alone with his or her siblings, you could always make up a little bed on the couch in the living area next to the Murphy bed.  Unless your children are particularly noisy I can't imagine that you'd disturb the neighbors.  We all know how rambunctious kids can be (mine included!) but I think it's safe to say that even their excited Disney voices shouldn't carry from your cabin to the next.  We never had any trouble with that (on the delivering or receiving end) when we stayed there.  I hope that helps!
