If I buy a five day theme park ticket and add the water park and more option, do I have to go the water parks on the day I use a theme park ticket?

No, Amanda, you aren't required to use your water park visits on the same day you use a theme park admission.  You will be permitted five admissions to the water parks, DisneyQuest, and/or the ESPN Wide World of Sports Complex.  How you choose to use those admissions is entirely up to you.  If you want to visit a major theme park and one of the water parks on the same day, so be it.  If you'd rather go on a down day when you don't visit a theme park, that's fine too.  If you want to go to both water parks on one day, that's fine, but it will count as two separate admissions.  The choices are all yours, Amanda.  Have a great time!
