We are booked at the Pop Century, with the free meal plan. We are thinking of up grading to a moderate, but we don't want to have a sit down meal every night. I prefer the counter plan. Can we trade a sit downs some nights for counter/snack instead

Hi, Janice! There is only one exchange that can be made on any of the Disney Dining Plans, and you have found it!  The only 'trading" that is allowed is that Guests may redeem one Table-service entitlement for one Quick-service meal.  The opposite is NOT true.  Using a Table-service credit for a Quick-service meal is not the best financial choice because the Table-service credits are worth more, but it is a good option for those not wanting to be tied down to Advance Dining Reservations everyday. Guests cannot combine Quick-service entitlements to redeem a Table-service meal.  Snack entitlements may not be combined for a Quick-service or a Table-service meal.  Table-service and Quick-service meals cannot be converted into snack entitlements.  Happy planning and have a Magical vacation!
