Is there anything to do in the rooms to occupy parents time after the children go to bed...I'm not comfortable leaving my child with in room care and going out. Any suggestions of what the resorts might offer or do I need to pack an activitiy?

The villa-style rooms at the Disney Vacation Club resorts are equipped with DVD players and those resorts have small rental libraries of movies. But beyond that there is not much in the rooms for activities other than the TV.

If you're not going out, you should think about what you like to do in the evening at home. If you're a reader, bring a book. If you're a knitter, bring your latest project. Beyond that, I really enjoy the quiet time in the hotel as an opportunity to reconnect with my hubby. At home, we're often both so busy with community volunteer commitments or chores in the house that we barely have time for a conversation. We often will bring a travel-sized board game with us (Scrabble is a favorite) and have a glass of wine and chat while playing. We really cherish this bit of vacation time as a couple.

You also might find that you want to go to sleep a bit earlier at WDW than you normally do at home. Our days at WDW are BUSY, filled with lots of walking, swimming, and lots of sensory stimulation. I love turning in a little early and catching up on some of the sleep that is all too hard to come by during the normal course of home life.
