    Can adults swap off with a child that is under the height requirements or one who may be too scared to ride certain rides?

    Yes. Just explain your situation to the cast member at the front of the queue for the ride of concern and ask for a "rider switch" or "rider swap" pass. (This is also known in some circles as a child switch/swap pass or baby switch/swap pass.) You will be given a "ticket" that will allow both adults to experience the attraction without waiting in line twice.
