You are correct. If you purchased an 8-day Park Hopper with the Water Park Fun & More option, you would be given 8 days of theme park entry PLUS 8 Fun visits (which could include admission to a water park, Disney Quest, or a few other places), giving you a total of 16 possible admissions. The theme park and water park admissions are unrelated, using one does not impact the other. This means that if you use all 8-days of theme park entry, you still have 8 Fun visits left. Since you have the no-expire option, you'll hang on to those Fun visits until you actually use them, no matter how long it takes.
I'm in the exact same position you are. There were several years that I purchased no-expire Park Hoppers with the Water Park Fun option. My theme park entries are long gone on those tickets, but I have big stockpile of remaining water park admissions on them that I dip into a few times a year.
