I have linked you to a great site which will help describe various vacation packages, hotel information and tickets. In order for you to be able to experience both parks in one day, you will want to purchase Park Hopper Tickets. I would strongly advise staying at one of the Disneyland Resort hotels. You simply can't beat the convenience. In addition, onsite guests can participate in Magic Mornings which grants admission to certain attractions before they open up to the general public. That brings us to your question about crowds. Being that it is summer, the parks will be crowded. I think you are on the right track visiting on the weekdays. You can expect that Cars Land, for example, will be packed early. Please don't let that deter you. You absolutely must experience Radiator Springs. You will feel like you stepped into the real town itself. I would suggest utilizing FASTPASS whenever possible. Rather than wait in an incredibly long line, you will gain quicker access. Be forewarned, however, FastPasses are usually gone for the day by mid-morning during busy times. So, get your FastPass for Radiator Springs Racers first thing when you enter the California Adventure Park!
In terms of vacation packages, there is a great offer right now at the Disneyland Resort which works for your dates. If it works with your plan, I think it's a great idea. Being that it's summer, you will need the extra time, in my opinion.
